It changes with the seasons, following the ingredients the land gives us and the ideas that are born in our kitchen.

Some things, though, are always there: flavour, substance, honesty.

Fried food plays the leading role, because it’s a treasure of popular cuisine — crunchy, generous, full of character.

Our first courses tell stories of home, our second courses start from tradition and play with it, and our desserts close the experience with grace.
